1.5 to 2 cups chicken stock, veg stock, or bone broth

Method:

In a large saucepan, heat a generous drizzle of olive oil over medium heat.

Add the chopped onion and garlic, and sauté until softened and golden.

Add the cauliflower florets and stir to coat them in the oil.

Cover the pan with a lid and let the cauliflower steam over medium-low heat until softened.

Pour in the stock and filtered water, then increase the heat to bring everything to a gentle boil.

Once boiling, reduce the heat to low and simmer covered until everything is soft.

Blend the soup using a stick blender directly in the pot, or transfer to a food processor or blender in batches. Blend until smooth.

Season to taste with sea salt.

Serve topped with freshly grated Parmigiano Reggiano and a sprinkle of hemp seeds if using.
